Are farmed caviar/alternative caviar any good?
so i know it is hard too find real caviar in north america now and the ones here are too expensive so just asking are those alternative caviars/farmed caviar any good? i think that maybe farmed ones might be okay but what about like lumpfish caviar? also im one of those who love beluga and do you know where i can get them? like in new york? how come there are still a lot of beluga in uk though?
As a former chef I have had alot from Russian to Iranian, sturgeon, trout, salmon, whitefish, the American sturgeon plus paddlefish and hackleback, I even had some snail caviar in France, as for the lumpfish you mentioned it is dyed with a chemical dye, raw it is a sick green colour, now the flying fish roe from Japan called Tobico is nice, and they are a sustainable fish, even farm raised fish meet there death when harvesting the caviar.
The beluga in the UK is from Russia or Ukraine, not much gets out of Iran to the UK anymore and the Chinese have been farming sturgeons for many years to.
